Breakfast Quesadillas

I forgot the sliced avocado on the side!

The kids are really into quesadillas lately so I figured why not for breakfast?  These were SO good and of course super easy.

First of, if you haven't tried these amazing tortillas from Trader Joes, you need to.  Now.  I put a tiny bit of butter in a pan, heat them up and eat them plain.  Yum.
You can just use regular corn tortillas too. :)

This is all I used (plus some sliced avocado to put on top or mash up for guacamole dipping)...
Tortillas, scrambled eggs, reduced-fat Mexican shredded cheese, refried black beans.

Make your scrambled eggs and set aside.  Spread black beans on one side of one tortilla.  Spray other tortilla with olive oil spray and place in heated saute pan.  Top with a small amount of cheese and a small amount of scrambled eggs.  Sprinkle with salt and pepper.  Place tortilla with black beans on top of egg/cheese tortilla and press down.  Cook for a few minutes, spray top of tortilla with olive oil spray and flip.  Cook another few minutes, let cool and serve with sliced avocado.
