Carrot Muffins/Cupcakes

These are delicious!

1 1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
3/4 cups vegetable oil
1 cup brown sugar
2 eggs
1/2 tsp vanilla
1 3/4 cups shredded carrot

Heat oven to 350.  Whisk flour, soda, salt, cinnamon and nutmeg.  In another bowl, whisk oil, sugar, eggs and vanilla.  Mix flour mixture into oil mixture.  Add carrots.  Transfer to muffin tins and bake for about 18 minutes.

Optional:  Top with this frosting.

I have not idea where I got this recipe!
